Summer Halibut

I love fish in the summer....this is a Halibut Filet I made for some clients who love fish....it is simple, clean and light:

The Halibut was a 2 inch thick filet.....about 6 oz or so. I smothered it with olive oil and pressed fresh ground pepper, sea salt and fresh parsley into the flesh. (Costco has a great sea salt-parsley mix). I seared it with olive oil.....depending on the thickness depends on how long; but for me, I cook it until the flesh goes from soft to touch up to more firm to touch.

It was delicious and I served it with Baby Carrots with Lemon-Dill Sauce.

Cooking Lamb for Clients....

I'm a Chef and I love taking pics of the food I make, when I have time....this lamb was SO easy....I oiled it really well on both sides with Extra Virgin Olive Oil and used Herbes de Provence all over and a bit of salt and fresh ground pepper.

Cooking this one is easy as I love it any temperature, although my preference is rare (5 minutes on first side, 3 minutes on the other, medium-high heat). I put oil in a pan, and sear it. (Will make a lot of noise but worth all the popping and crackling you will hear. I use the "touch" method to decide how done it is. The softer to the touch, the rarer it is....although for exact temps you can always use a thermometer.

You can also use the drippings to make a glaze....add some beef broth and a bit of wine....some salt, pepper, garlic and a touch of cornstarch (for thickening). Voila ! ENJOY !!!

Stupid Common Sense

I guess this is meant to be a little Public Service Announcement about Home Security

at lunchtime yesterday i came home to find the front door was tampered with, my key didn't work and the door woudln't open
I called the police...yes someone broke into our house

Fortunately, we had our nice tiffany's wedding rings all itemized on our insurance...because that's the main thing that was taken.
Also, having a safe doesn't do much good if they keys are in it (yeah stupid we know). They didn't take our birth certificates/passports/marriage license/ss cards out of the safe, but they easily could have written everything down. Same as with all our files that they went through in our UN-locked file cabinet.

Moral of the story: take a minute or two to write down an inventory of your jewelry, important docs, guns or anything else easily pawnable and give it to your insurance company. Good Idea to take pictures of these things too. Then, make sure you LOCK those things that can be locked.

x-posted a couple places, sorry if you see it more than once

Theme thoughts.. . .
by stillhisangel (stillhisangel)
at March 6th, 2007 (10:02 pm)

I really do enjoy the themes. I don't always get around to using the theme ingredient during the contest period. So I had a thought, and this is just a thought to throw out there. Maybe when we pick the theme, we can look not only at ingredients, but also at ways to cook? Like the theme could be stir fry or sauteed or pastry or something along that lines? I often say that I'm going to do the theme, but then I never get a chance to use the ingredient during the time period specified. I do, however, cook in many different styles all of the time. Thought I'd toss that out.

The other day we had homemade taco salads for dinner - even the tortilla bowls were homemade, but it was still an unbelievably easy meal. It was also really quite healthy since we used baked low carb, low fat whole wheat tortillas instead of fried corn ones, really lean beef, and tons of veggies.

I made a chicken tortilla casserole the other night. It came out great! I was a bit surprised considering it had a lot salsa in it. Its pretty fattening so make it for a special occasion unless you arent watching your weight.
I'm going to put the recipe & pictures behind the cut.

Wow, so its me again huh?

For the sake of making this whole thing more appealing to people, I'm gonna choose a really common but really versatile ingredient: CHICKEN. I don't think there are any vegetarians in here (not that I remember, anyway) so I know just about everyone here cooks with it in one way or another, and does so fairly often. Its one of those things that can be prepared with almost any method to fit into almost any food ethnicity or flavor combination, and I dunno about you but I know I have some favorite, go-to chicken recipes that I can always fall back on when I have no other ideas.

So, share some of YOUR favorites! Have a standby stir fry? A perfect roaster? Maybe some sweet, smokey barbecue? How about Indian or Italian? Do you like it fried or sauteed? Roasted or broiled? Got a favorite marinade? How about a salad or pasta dish? Anything goes!

I'm giving y'all about a week and a half - the new deadline is Monday February 19th. C'mon folks, show me what you can do! :)
